Albion Manor's Recipes

 

Ingredients

 

1       egg per person
2       potato patties
          gruyere cheese
1       tabasco
1       tsp basil pesto
1       cherry tomato per person

 

Directions

 

Very important: you have to have a non-stick pan for large muffins, or, and these work very well, large silicone egg poachers, one per person.

 

Spray the muffin tray with cooking spray.  It is important to cover well.  Microwave the potato patties until very hot.  Put them on a board and press them together with a fork, spreading them out to about 5” diameter.  With a spatula, move the large patty to the muffin tray and gently press into place.  I use a mortar to press it around the sides to make a nest of potatoes.  Make sure that the potato is well secured and that there are no holes or cracks.

 

Put a small ¼” thick piece of gruyere in the bottom.  Then a splash of Tabasco or other hot sauce.  (It’s the surprise at the bottom.)  Carefully crack an egg into the potato nest.  Add a teaspoon of pesto and a cherry tomato cut in half.

 

Bake at 350° for about 15 minutes.  You will have to watch your over carefully after about 12 minutes.  Give the tray a little shake to see if the eggs have set.  Take them out before they are firm because they will continue to cook after you take them out of the oven.  With a small spatula, gently lift the nests out of the muffin tin and put onto hot plates.

 

Serve with Spanish pisto (not pesto) and turkey bacon.  Garnish with fresh basil.
