Ingredients

½ 0.75 1 1 ½ 2 2 ½ 3 ¼   cup whole milk
½ 2/3 ¾ 1 1 ½ 1 2/3 2 ¼   cups flour
2 tbsp 3 tbsp 1/4 1/8 3/8 ¼ 3/8   cup sugar
2/3 1 1 1 ½ 2 2 ½ 3 ½   tsp vanilla extract
1/8 ¼ 3/8 ½ ¾ ¾ 1   tsp cinnamon

Dried cranberries
Walnuts

Granny Smith apples- 1/4 per person, peeled, cored and quartered

3” ramekins- 1 per person

Cooking spray

 

Directions


Mix first group of ingredients together and beat well.  Let it stand while you are doing the following.
 

Coat the interior of ramekins with cooking spray.   If you don’t use enough, everything will stick.  Also, they seem to rise better if they don’t stick to the sides of the ramekin.

Arrange slices from 1/4 of an apple on the bottom of the ramekins, then a sprinkle of walnuts (you can use pecans) and a sprinkle of cranberries (or blueberries).

Give the liquid mix a stir: it will have settled a bit.  Fill the ramekin with the liquid, not quite to the top.  You can make them the night before and store them in the fridge. 

 

Bake in a 350° for 75 minutes if they have been in the fridge, about 45 minutes if not. 

 

You may have to play with the cooking time and the oven temperature.  I have a feeling that my oven is under 350°.  Slip them out of the ramekins and place on a spoonful of cranberry-maple compote.  Sprinkle with icing sugar and a drizzle of maple syrup.  Serve immediately or they will fall.
