Albion Manor's Recipes

2 kilos (about 4 1/2 lbs) of tropical fruit (pineapple, mango, kiwi and papaya- don’t use citrus fruits, oranges etc., they make it too acidic). You can use frozen fruit but make sure it is thawed before cooking. You can use tinned fruit, but be sure to drain off the liquid before cooking.


cut the fruit into small bite-size pieces

put into a large pot
1/2 tbsp madras curry powder
1 cup water
1/2 cup sugar


Stew until the fruit has softened a bit. Not too long because you want it to retail it's shape.

That’s it.  Add a bit of vanilla yogurt on top and you’re done.
